Simple Sourdough Discard Crackers
If you find yourself with lots of leftover sourdough starter, you need to try this no fuss, super easy recipe. These crackers honestly taste a bit like Cheez-It crackers and there isn’t even any cheese in them! I know Cheez-Its aren’t the healthiest things, but I do love them. So, this recipe fills a need and it doesn’t hurt that they are much healthier! You really should give it a try, it comes together very quickly, only two ingredients, plus seasonings of your choice and they can be ready in under 30 minutes.
INGREDIENTS
3/4 cup (200g) sourdough discard
2 Tbs. (28g) butter, melted
1/4 tsp. fine sea salt
2 tsp. dried herbs, see notes below
1/4 tsp. kosher salt, for sprinkling on top
DIRECTIONS
Preheat oven to 325ยบ
Stir the first four ingredients together and then pour onto a sheet pan, lined with parchment or a silpat liner. With an offset spatula, smooth out the batter into a very thin rectangle; it should fill a good portion of the sheet pan. Next, season with whatever suits your fancy; plain kosher or sea salt, “everything bagel” seasoning, za’atar, garlic powder, onion powder…the choices are endless, just use what you like. One of my favorites is Nutritional Yeast, this is a new item for me and I love it.
After seasoning, bake for 5 minutes. Then, remove from oven and lightly score the dough into whatever shape you prefer, triangles, squares or long, thin rectangles. Return the pan to the oven and bake for another 10-15 minutes, until lightly browned. Finally, remove from the oven, let cool completely and then break the crackers on the score lines and that’s it. Enjoy and let me know how you like them.
NOTES
When seasoning the crackers, use what you like or try something new. Some of my favorites are za’atar, nutritional yeast, just plain kosher salt, or sea salt. The list is endless, everything bagel seasoning, garlic powder, onion powder, rosemary, or just plain fresh ground pepper…be creative!
